Just wondering if someone could please advise whether a non-resident can still claim an interest deduction on their Australian Investment Property?

Yep! Your residency status won't impact rental expenses you can claim. Being a foreign resident changes some CGT rules, but not on taxable Australian property (which land and housing are).

 

Remember that your tax residency is different from your residency with Home Affairs, too.
