Does income from selling e-books and online courses (globally) contribute to my GST threshold?

I assume you're from Tassie, which is a lovely place :) It sounds like you're already doing the right thing by declaring the income in your tax return because you must report this income. As for the GST side of things, you must include the sales to overseas customers when working out your GST turnover, even though these sales are GST-free. This means you must register for GST if it puts you over $75,000, but you only charge GST to your Australian customers. Hope that makes sense.
