I wanted to check if we could hire and pay salary to an overseas worker who used to be in Australia a few years ago. This past employee is to work remotely and has an Australian Valid TFN and Bank Account.

If they are not a resident in Australia for tax purposes, you would need to follow the applicable taxation laws in the country they are located.
