I worked as an Allied Health Assistant in a hospital for most of the last tax, however i cannot find an occupation title that encompasses this type of work. I have looked through the ATO occupation list but cant even find a generic "health care worker" or "allied health worker"

At the Occupation box you can type in Assistant and then select Nurse - assistant or aide. Near enough will be fine. There's also numerous ones to choose from under Health.
