I have a property that I am renting out with full ownership.
As my wife has lesser income, I would like to hand the majority of income of this property over to her.
Is it ok for my wife to sublease the property from me, in which I will pay income tax on. My wife will pay income tax from the direct rent earned.

What you are proposing could be viewed as a form of tax evasion/fraud. I would suggest seeking advice from a tax agent or financial advisor before implementing something like this.
That sounds like a scheme to reduce tax without any redeeming commercial purpose.
As such, ATO could ignore it and tax you anyway.
