I am a PhD candidate on a student visa subclass 500. I will be volunteering in Indonesia for a month this winter and I want to make sure this complies with my work restrictions. I will not be getting paid.

Doubt you will get a useful answer through this forum. Visa conditions are the purview of the Department of Home Affairs, not the ATO.
Check with them.
