So, I struggle financially (thanks disability), and to help with this I've started going on dates and providing other services one-on-one with older people, mostly men, in return for money. I'm a "sugar baby" if you will.

But I've run into some very confusing roadblocks with taxes. Do I have to pay tax on my income if my client addresses it as gifts to a significant other (boyfriend, spouse) on his? If it's not a consistent income, do I have to pay the same in PAYG installments each time? It should be $600 or less for each "meet", but do I tax those individually? I have no idea how to do this.

Besides that, the legal requirements for my work are equally confusing, so if anyone has any tips for someone of my profession in NSW, I'd be grateful.

You should obtain an ABN and declare the income in your individual tax return. You will then have a tax bill for the amount of income you declare. Estimate your earnings and keep aside some of your earnings for the tax bill when you file your next return.
