I my spouse has a small sole-trading company that does not earn her very much.

I earn a full-time income, but have capacity to earn more contracting in my spare time.

I do not want to earn any more as it will increase my taxable income.

It is possible for me to invoice for my contracting work via my spouse's sole-trading company? (i.e. work for free for her company)

PSI rules would apply.

Best to get proper advice relevant to your circumstances from a local tax agent.
