Do I dedcut PAYG on an interest payment

I have to back pay missed wages and will also be paying an interest payment calculated on the amount of the back pay. How do I treat this interest payment - does it need to be taxed? Does it need to show on the employees income statement? Is it processed as a untaxed payment? thanks
