Can I omit gst from certain invoices and pull it out of my earnings at the end of the quarter (i.e. for pensioners).
I'm about to register so I can work for businesses, but don't want to be charging regulars who are already on a budget.

The short answer to that is no.
It's a nice gesture you're trying to make but once you're registered for GST then you're required to be charging GST on your invoices.
