I want to start running stalls and raising funds to help poor farmers in Africa, I just don't want to spend my life doing paperwork and paying lawyers and accountants (which is what I have been told will happen if I register as a charity). Is there a less onerous way to formalise a structure for income tax purposes, and help people rather than registering a charity? How does tax work on a social enterprise, for example? Is that the simplest most efficient option? At what point do I need to register if I'm raising funds?

There is a lot of info available on what you need to do to start a not-for-profit. It's worth reading through before you write it off as an option.
If that isn't the path you want to go down, you could look at volunteering your services to raise money for an already existing not-for-profit.
A social enterprise is the activity the business does, it's not a business structure. So, if you were a company, for example, that is a social enterprise, you would still have the same tax obligations as any other company without NFP status.
