I and my wife will move to and live in Dubai for at least for 5 years for a new job in Dubai for me. I have two properties in Australia: one is rented out and I am living in the other. When I move overseas, I want to Airbnb the property in which I am currently living. Will I still be considered non-resident for tax purposes?

Would be best to see a tax agent or apply for a private ruling
You would need to check with residency tests whether you would be resident or non-resident for Australian tax purposes. Likely the one to check is the domicile test since you would be overseas.
